Drying, a technique symbolic of Valpolicella, takes place in the Fruttaio, where the grapes dry naturally. Massimago adopts a sustainable approach inspired by Japan, using natural winds instead of machinery and reclaimed wood cladding. The Fruttaio thus becomes a functional and environmentally friendly structure.
